Recipe: Macaroni Casserole

This is a meal that I came up with a few years ago when I was trying to make lunch for my husband and I, but didn't have much in the fridge. I was wanting some macaroni, but wanted to add more substance to it. So I put together random ingredients that I found in my fridge and pantry, and came up with this simple little spin on macaroni. I call it Macaroni Casserole. I never know what to call my recipes, so I usually just tack the word "casserole" on the end of whatever the main ingredient is!

Ingredients:
1 box Kraft Macaroni and Cheese (prepared as directed)
1/2 lb ground beef
1 small tomato- diced
3-second squirt of ketchup (about 2 Tbsp)
1/2 cup shredded cheddar cheese

Brown up the ground beef in a large skillet. I always season with salt and pepper, and sometimes with onions and garlic as well.

In the meantime, cook the macaroni and cheese according to the package directions. Add a little extra milk to make it more saucy.

Turn down the heat on the ground beef to low and add the macaroni and cheese to it. Then add the ketchup, tomatoes, and cheese. Stir all together.

And there you have it! Simple and easy. And a little bit healthier with the tomato! ;) Plus, this will stretch a box of macaroni to a meal big enough to feed 4 people.

Note: you could also use homemade macaroni and cheese to make this meal more wholesome, but in my personal opinion, nothing beats Kraft. It's one of my guilty pleasures.

My Mom has done that... and now I do it. Just throw stuff together with mac n' cheese. It's the poor people's meal. We call it Mac N Cheese Goulash. The only difference is instead of more cheese, we add corn.

Yes I finally weigh less than you at 132! :) We really need to get together since the whole zoo thing didn't work out. If I have a girl the strawberry outfit is yours! And everything else I have if you want it!
